Easy Chicken Tortellini Soup
Ingredients
1 tablespoon of olive oil1/2 medium chopped onion
3 finely chopped celery sticks
3 large carrots, peeled and sliced or chopped
Chop 2 cloves of garlic
8-cup chicken stock
2 cups of water
2 features of Italian seasoning
2 cups cooked chicken (or more to taste)
1 (25 ounces) bag of tortellini with cheese
Salt and pepper to taste
Chopped parsley to taste
Instructions
Chop the onion. Add it to a large pot with olive oil. Fry over medium heat for 5-7 minutes (it is good if the onion is slightly browned).Meanwhile, chop the celery and carrots, then add them to the pot along with the garlic. Mix well and cook for a couple of minutes.
Add chicken stock, water and Italian seasoning. Increase the heat to high, and as soon as it begins to boil, reduce the heat to a rapid boil and let it cook for 10 minutes.
Add chicken and tortellini to the pan. Increase the heat to medium and let the soup cook for another 10 minutes or so. If it starts to boil violently, you may have to turn off the fire again.
Season with salt and pepper as needed and garnish with chopped parsley. Serve immediately.
Recipe Notes
This type of soup absorbs the broth, so it is best to eat it right away. The leftovers are still delicious, but you may need to add more water or chicken stock.Check out my blog tips if you want to make this soup in your slow cooker.
