The Best Ever Healthy Homemade Blueberry Muffin Recipe

Ingredients

16 ounces of applesauce

1 tbsp sunflower butter

2 tbsp vanilla

1 1/2 tsp baking powder

1 tbsp baking powder

1 cup almond milk *

⅓ to ½ cup maple syrup I use ⅓ and find it sweet enough

1½ cup of oats

1 cup of oatmeal

1 cup of vanilla protein powder

½ cup of finely ground flaxseed

¼ cup of chia seeds

12-15 ounces of fresh blueberries Frozen wild blueberries will work too - but you will have purple muffins!

Instructions

1. Preheat the oven to 350 degrees.
2. Whisk apple sauce, vanilla and sunflower butter.
3. Next stir in the baking powder and baking powder.
4. Mix in almond milk and maple syrup.
5. The combination of almond milk and maple syrup should make 2 cups of liquid. Adjust the almond milk according to the amount of maple syrup used. I find that 1/3 cup of maple syrup makes the muffins sweet enough.
6. Slowly stir in the oats, oatmeal, protein, ground flaxseed and chia seeds.
7. Finally, fold in the blueberries carefully.
8. Line 2 muffin tins with baking tins
9. Fill the muffin cups about ⅔ full.
10. Place muffin tins in your preheated oven. Bake at 350 degrees for 14 minutes. Turn the pans and bake for the last 14 minutes.
